Ingredients and spices that need to be Prepare to make Chicken mandi:

  1. For cooking rice :-
  2. 1 kg soaked basmati rice/sella rice
  3. 1 onion
  4. 2 tsp salt
  5. 1/2 teaspoon sugar
  6. 1 tablespoon mandi spice mix
  7. as required Water as per quantity & quality of rice
  8. 1 tablespoon melted butter
  9. 3 tbsps ghee/ oil
  10. 1/2 lemon juice or 1 dry lemon
  11. 4 chopped & minced garlic or 1 tbsp ginger garlic paste
  12. 1 tablespoon coriander leaves for garnishing
  13. nuts:-
  14. 3 tbsps raisins (kishmish)
  15. 3 tbsps chopped almonds (badam)
  16. 2 tbsps chopped Cashews can also be added
  17. For marinating chicken:-
  18. 4 chicken Thai pieces (more or less can be added accordingly)
  19. 3 tbsps mandi spice mix
  20. 1 tbsp white vinegar/1/2 lemon juice
  21. 3 tbsps melted butter (lurpark)
  22. 2 pinch orange red food color
  23. 1 tbsp salt
  24. as required To serve :- salata hara recipe linked below

Instructions to make to make Chicken mandi

  1. Firstly wash chicken with white vinegar drain all the water add deep gashes and marinate with all mandi spices, lemon juice,butter,food color and marinate for at least an hour.then preheat oven for 10 minutes with both flames on then set chicken on baking tray and brush with butter.pop it in the oven for 15-20 minutes or until chicken is cooked.
  2. Besides in a pan add ghee and fry nuts for a minute then set aside with the ghee.further take a nonstick wok add ghee & butter drop chopped onions sauté until slightly soften then add mandi spice mix,salt,sugar,lemon juice,ginger garlic paste,sauté until colour changes on medium flame burner.then add water and soaked rice cover it & cook until rice is cooked it takes around 10 minutes.finally drizzle the nuts with ghee on rice.add it on a serving platter with rice & chicken.
  3. Serve the delicious & chicken mandi with salata hara and enjoy the meal …!
